I recommend the use of internet ESL sites. Many offer wonderful documents free of charge. I can suggest for instance for intermediate to advanced students www.breakingnewsenglish.com, www.esldiscussions.com, www.wordchamp.com or other websites on my page of useful websites.

But remember you want to elaborate a logical structure for your course. You want your students to learn from your course for the rest of their lives. You want them to keep their precious documents (preferably in booklets) as references and not just throw away the photocopies at the end of the school year. You want to evaluate them fairly so that they will progress rapidly. All these problems of motivation, organization, language acquisition and evaluation are discussed in "QualityTime-ESL: The Digital Resource Book".
